Equipped with noble and elegant materials with a pure design, one can find the dining room inside of the kitchen, be part of the action orchestrated by Teshi, and enjoy the chef's french contemporary cuisine sublimed by some of his japanese technique and philosophy.

Ryuji Teshima, aka "Teshi"

Not a typical Japanese Chef! Straight from Kumamoto and holding a strong passion for Gastronomy and big ambitions, he came to France when he was 26 years old, not knowing what was awaiting ahead, not speaking a word of french. He considers himself as one of the French chefs of his own generation when he started as a line cook in Michelin Stared Restaurants back then.

After a brief culinary experience in Japan, Teshi went straight to Epernay in Champagne region to start his career in France, then integrated Alain Sendrens' kitchen team at Lucas Carton, then taking a slight curve towards apprenticing as a butcher with the famous Hugo Desnoyer and as a fish monger with Terroir d'Avenir when they fist launched. There he learned the French terroir, the produce, and expanded his network with farmers and the best producers
Après avoir étudié la cuisine française dans son Japon natal, celui qui se fait appeler « Teshi » a débuté sa carrière française à Épernay en Champagne avant d’intégrer la prestigieuse brigade d’Alain Senderens chez Lucas Carton puis de côtoyer le boucher Hugo Desnoyer où il a perfectionné sa connaissance de la viande. Son passage chez Terroirs d’Avenir lui a ensuite permis de se familiariser avec les terroirs français et de connaître tout ce que le territoire compte de petits producteurs.

Depuis 2014 et suite à une longue période où il a vagabondé de restaurants en restaurants, d’un continent à l’autre, « Teshi » a posé ses valises dans le très sage 16ème arrondissement. C’est dans son intimiste restaurant « Pages » que nous retrouvons ce chef passionné, enthousiaste, volontiers enjoué malgré la masse de travail impressionnante qu’il abat pour amener sa cuisine au plus haut niveau. Ne croyez pas que l’obtention de sa première étoile en février 2016 est un aboutissement pour ce cuisiner obsédé par le détail. Cette étoile, vécue comme une récompense pour ses équipes, n’est qu’une étape dans sa quête de perfection.
